Healthified ‘Snickers’ Bars from Thrive Market

I have already posted this on my facebook page and I have since made it twice, with a few refinements. I was

 at Kroger today and they were clearancing out some medjool dates so I bought them all and made these. I have been a little bit obsessed with medjool dates lately because I have a weakness for caramel and these dates have a 

delicious caramel flavor and blended in a food processor turn to a gooey mass, just like caramel. The only downside is that they are expensive, hence the clearancing joy! I have modified these a bit, mostly for my own taste and the chocolate I have been using lately is Enjoy Life brand, which is an allergy free chocolate, but it still has a little sugar in it, so I halved the chocolate from the original recipe. Ingredients

14 ounces medjool dates, pitted
1/2 cup natural peanut butter
2 teaspoons vanilla extract
1 cup crispy rice cereal
1/2 cup lightly salted roasted peanuts, roughly chopped
1.5 ounces dark chocolate

 

Instructions

Line a standard-sized loaf pan with parchment paper and set aside.Place dates, peanut butter, and vanilla in the bowl of a food processor fitted with the blade attachment. Process until the mixture forms a paste and comes together as a ball. Transfer to a large bowl, add crispy rice and peanuts, and mix to combine.

Press mixture into prepared loaf pan in an even layer. Place in fridge to chill.

Melt the chocolate in a microwave safe bowl. Microwave until just melted, stirring ever 30 seconds. Pour melted chocolate over peanut mixture and smooth out with a spatula. Let set in fridge, about 30 minutes.

Remove from pan and slice into 1-inch thick bars. Store covered in fridge.
